Aunt Shannon’s Cheesy Spinach Rice Casserole

Hello!  Happy Friday!  How excited are you for the weekend?!  It is expected to be beautiful, but cold here in the Big Apple.  So I thought it would be the perfect time to share with you a dish to keep you nice and warm- Cheesy Spinach Rice Casserole.

It’s a recipe that came from my Aunt Shannon and as my mom says, “Everybody love’s this dish!”  (True Story)   It’s even fancy enough to serve at your big Thanksgiving feast next week!  Yesterday was our work pot luck so I did what any normal person would do and cooked this on my desk in a slow cooker.  It was quite an adventure and truly worth it.  Especially when at the end of the pot luck my slow cooker was scraped clean.

Cheesy Spinach Rice Casserole 
1 box frozen spinach (keep frozen)
1 can cream of mushroom soup
1 c Minute Rice (in the red box)
1 c Water
3 T chopped onion
2 T butter
8 oz Velveeta, cubed
Preheat the oven to 350 degrees.  Butter a 13×9 casserole dish; add all the ingredients and bake at 1 hour, stirring occasionally.
Note #1 Feel free to double the recipe because it goes quickly!
Note #2 If you also use a slow cooker, it will cook on high for 4 hours
